Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, cooked
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta cheese, spinach, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles over the sauce.
  6. Add half of the ricotta mixture, followed by zucchini and bell pepper.
  7. Sprinkle with mozzarella cheese.
  8. Repeat the layers, ending with noodles and marinara sauce on top.
  9. Finish with mozzarella and Parmesan cheese.
  10. Bake for 45 minutes or until golden and bubbly.
  11. Let it cool for 10 minutes before serving.

Notes

  • Use fresh vegetables for better flavor.
  • You can add other vegetables like mushrooms or carrots.
  • For a spicier version, add red pepper flakes.
