Description

This lasagna soup recipe is creamy, cheesy & ready in 30 mins. A quick, comforting dinner the whole family will love. Try it tonight!


Ingredients

  • 1 tbsp olive oil

  • 1 lb ground beef (sub: Italian sausage or ground turkey)

  • 1 medium onion, diced

  • 4 garlic cloves, minced ([see our guide on how to mince garlic])

  • 1 tsp dried oregano

  • 1 tsp Italian seasoning

  • ½ tsp crushed red pepper flakes (optional, for spice)

  • 1 (28-oz) can crushed tomatoes

  • 4 cups low-sodium chicken broth (sub: vegetable broth for vegetarian)

  • 8 lasagna noodles, broken into pieces (sub: any pasta shape)

  • Salt & black pepper to taste


Instructions

  • Cook beef, onion, garlic, and seasonings.

  • Add tomatoes, broth, and noodles. Simmer until pasta is tender.

 

  • Top with ricotta, mozzarella, and Parmesan before serving.
