- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 pie crust
Instructions
- Preheat oven to 425°F (220°C).
- In a saucepan, melt butter over medium heat.
- Add onions, carrots, and potatoes. Cook until tender.
- Stir in flour, salt, pepper, and thyme.
- Add chicken broth and milk. Cook until thickened.
- Stir in shredded chicken and peas.
- Pour mixture into pie crust.
- Cover with second pie crust. Cut slits for steam.
- Bake for 30-35 minutes until golden brown.
Notes
- Use leftover chicken for convenience.
- Feel free to add other vegetables.
- Let it cool before serving.
