Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 pie crust

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat.
  3. Add onions, carrots, and potatoes. Cook until tender.
  4. Stir in flour, salt, pepper, and thyme.
  5. Add chicken broth and milk. Cook until thickened.
  6. Stir in shredded chicken and peas.
  7. Pour mixture into pie crust.
  8. Cover with second pie crust. Cut slits for steam.
  9. Bake for 30-35 minutes until golden brown.

Notes

  • Use leftover chicken for convenience.
  • Feel free to add other vegetables.
  • Let it cool before serving.
