Ingredients

2 large chicken breasts (sliced thinly or use thighs)
2 tbsp olive oil (or butter)
8 oz mushrooms, sliced (white or cremini)
3 cups fresh spinach, loosely packed
3 cloves garlic, minced
1 cup heavy cream (or half-and-half for lighter)
½ cup chicken broth
½ cup grated Parmesan cheese
1 tsp Italian seasoning
Salt & pepper, to taste

Instructions

Season and sear chicken.
Cook mushrooms and garlic.
Make creamy sauce with broth, cream, Parmesan.
Stir in spinach and return chicken to finish.
