- 2 cups cooked chicken, shredded
- 1 cup rice, uncooked
- 2 cups chicken broth
- 1 can cream of mushroom soup
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the chicken, rice, chicken broth, cream of mushroom soup, milk, and garlic powder.
- Add the frozen vegetables and season with salt and pepper.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheddar cheese.
- Bake for 45-50 minutes or until the rice is cooked and the casserole is bubbly.
Notes
- You can use leftover chicken for this recipe.
- Feel free to add your choice of vegetables.
- For a spicier dish, add some diced jalapeños.
